The first recipe I tried from my aunt’s recipe box was Spicy Oatmeal Cake. I was looking for something to make that didn’t require me to go to the store and I had the ingredients for this one! I was skeptical at first because I thought it sounded rather bland and not really spicy at all, but in the end, it turned out to be incredibly moist and delicious. A lovely blend of spices that kept us coming back for “just another piece.”

The Recipe


Making the Cake
The first thing the recipe says to do is to pour the boiling water over the oats and let them soak. I used Bob’s Red Mill Old Fashioned Oats, I recommend using the old fashioned oats rather than the quick cooking, because pouring hot water over quick oats will make yourself a bowl of oatmeal rather than just softening them up.

For the next steps I used my Kitchenaid stand mixer, but I think it could be done with a hand mixer or even by hand if your butter is soft enough.
I creamed together the butter and the sugar

Then added the vanilla and eggs

Then added the soaked oats, and then added the sifted together flour, soda, cinnamon, salt, and nutmeg. Poured into a greased 13×9 inch baking dish.

Baked at 350 for 25 minutes (could take longer in some ovens, but mine was finished at 25 minutes).

I know it looks a little plain, but it truly did not need any icing or glaze. Might be good with vanilla ice cream or a bit of whipped cream, but it was really good all on its own. I can’t stress enough how moist it was! I was also thinking that it would be delicious with apples incorporated into it, but I don’t know if that would change the proportions of the dry ingredients needed due to the increased moisture. Would be a fun experiment though!
Spicy Oatmeal Cake

Ingredients
- 1 1/4 cups boiling water
- 1 cup rolled oats
- 1 1/2 cups brown sugar, firmly packed
- 1/2 cup butter
- 1 teaspoon vanilla
- 2 eggs, unbeaten
- 1 1/2 cups sifted all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
Directions
- Step 1 Preheat oven to 350 degrees
- Step 2 Grease a 13x9x2 inch baking dish
- Step 3 Pour boiling water over oats in bowl, cover and set aside.
- Step 4 In mixing bowl, gradually add sugar to butter, creaming well
- Step 5 Beat in vanilla and eggs.
- Step 6 Add oat mixture, mix well
- Step 7 Sift together remaining ingredients, add and stir until well blended.
- Step 8 Pour batter into prepared pan.
- Step 9 Bake at 350 for 25-30 minutes or until toothpick comes out clean.
